The Better Breakfast: Overnight Oats

As rewarding a breakfast as oatmeal is, it also feels like the most burdensome. Taking our city’s traffic into consideration, few of us have the time to dote on a pot of boiling oats in the morning, making sure that they soften into a consistency that doesn’t resemble wet papier-mache.

While oats have always better than cereal, we needed a better way to make them. Only recently did we discover the sheer wonder of overnight oats. Soaked in your choice of milk and left in the fridge overnight, a serving of oatmeal can be ready to enjoy in the morning.

Of course, with the time you save, you’ll want to go all out with flavor. For this recipe, we’ve added a few treats that will have even your kids skipping the cereal for this healthier alternative. Feel free to top as you please!


Overnight Oats with Balsamic Maple Strawberries & Mint


½ cup steel-cut oats

1 cup coconut milk

1 cup strawberries, sliced

2 tbsp maple syrup

1 tbsp balsamic vinegar

1 tbsp mint, chiffonade

Pour oatmeal and millk into a jar and refrigerate overnight. When ready to serve, heat a small sauté pan over medium heat. Add sliced strawberries, maple syrup, and balsamic vinegar and sauté for 3-5 minutes until strawberries soften. Serve on top of oatmeal with mint.
